I came across this recipe and made it tonight. I am super fussy and really enjoyed it. Don't get me wrong, a great big burger was on my mind but with Christmas still 'hanging' around I have to make a few changes to my diet for the next little while.

I also like this because I am really not a big fan of lettuce and at times it goes wilty in the fridge. So I have another use for it.

Little oil for cooking

1 small onion, chopped

2-3 garlic cloves, chopped

1 teas. butter (optional)

1 large head romaine or leaf lettuce chopped

1 cup fresh or frozen peas

2 c low-sodium chicken stock

1/2 t. sugar

1/4 c. no/low fat sour cream (optional) but tasty

2 tbsp Fresh mint, chopped (optional)

In a large saucepan, heat a drizzle of oil over medium-high heat. Add onions, garlic and butter, and saute for 5 to 7 minutes, until the onions are soft. Add lettuce and stir until it wilts. Add the stock, peas, and sugar, and bring the soup to a simmer. Cook it for 15 minutes, then remove it from the heat and add sour cream and mint. Puree the soup until smooth using a hand blender or a regular blender (my choice). Serve hot, or cool completely, then chill and serve cold.

It would be great served with grilled or poached fish. To make it a bit more fancier - put finished soup through a sieve, fish in the centre and garnished with fresh mint. Great spa meal!

Is it wrong to have a glass of white wine with this recipe during my cleansing time?

Cheers, I mean bye for now,

It is a great breakfast or snack option. Rolled oats for carbs, Greek yoguart, great source of protein and added coconut water for electrolyte replacement. I haven't tried it yet but soft tofu could replace greek yoguart. You may, however, have to cut down on the coconut water.

Coconut water contains: 5 essential electrolytes - sodium, magnesium, calcium, potassium, phosphorus. It contains more potassium than a banana. ZERO fat, ZERO cholesterol, ZERO added sugar. But watch some brands have added sugar stay away from those ones. It is great as a sports drink as it helps with electrolyte replacement and rapid re-hydration. I get mine from T&T market in #YYC. But any Asian store will carry it. Health food stores carry it as well but pricier.Superstore has a great Greek yoguart.

2 large apples

1 cup rolled oats

3 tbsp flax seeds or 1 tbsp chia seeds

1 1/4 cup plain 0% or 2% Greek yoguart or soft tofu

1 1/4 cups coconut water

1/2 cup berries

1 tbsp fresh mint leaves, chopped

3 tbsp honey (or to taste) optional

pinch of salt

fresh berries, granola and chopped nuts for garnish (watch the added calories)

1.Coursely grate the apples. Add the rolled oats, flax seeds (Chia), coconut water, yoguart (tofu), berries and mint and stir until thoroughly combined. Cover the muesli and refrigerate overnight.

2. Mix the honey and salt into the muesli and spoon in bowls. Garnish and serve.
